Avocado Fries

You could do this recipe in your sleep it’s so easy, just be sure to be awake when you take your first bite! These avocado fries possess all the tasty splendor of a potato fry without the guilt so you can feel good about going back for more…and more…and maybe even one more.

Ingredients:

  • 1 Very Firm Avocado 
  • 1 Box of Olivia’s Croutons 
  • 2 Eggs
  • 1 Lime 
  • Salt and Pepper

Recipe: 

Cut avocado in half and remove pit. Length ways, cut avocado into slices and remove slices with spoon, place in freezer for 5 minutes (just to firm up before baking). Whisk eggs in bowl, set aside. In a blender or food processor, grind up croutons into crumbs and place in a wide, shallow bowl. Preheat oven to 375 degrees. Remove avocados from freezer. Take one slice of avocado and dip it into the egg, next coat the avocado slice with crouton crumbs and place on a lightly oiled roasting pan or baking sheet. Repeat until all of the slices have been coated. Bake at 375 degrees for about 10 minutes or until fries are golden brown and bubbling. Remove from oven and let rest for about 5 minutes. Sprinkle with salt and a squeeze of lime before serving.
