Deep Fried Shrimp Tacos & Jalapeno Margarita

Happy Cinco de Mayo! We are celebrating with a crushed crouton-fried shrimp taco and a spicy spin on a classic Margarita! Get ready to fire up your festive spirit with our recipes below!

Deep Fried Shrimp Taco Ingredients:

6 Blue Corn Taco Shells

25 Jumbo Shrimp, shells removed/tails on, uncooked

2 bags Olivia’s Parmesan Pepper Croutons, crushed

1 cup flour

2 Eggs, whisked

4 Cups Vegetable Oil

1 Avocado, sliced w/ pit and shell removed

1/2 Purple Cabbage, thinly sliced

1/2 Head of Romaine Lettuce, thinly sliced

1/2 Red Onion, thinly sliced

1 Jalapeno, cored w/ stem and seeds removed, thinly sliced

1 Lime, cut into wedges

1 (Medium) Tomato, diced

Salt to taste

Chives for garnish



Prepare dredging station with eggs, flour, and crushed croutons. Preheat vegetable oil in pan for frying (Medium-High heat) til’ about 350 degrees. You can easily test the oil by tossing a few of the crouton crumbs in it, if the oil immediately bubbles, you’re good to go. Next, begin by placing the shrimp in the flour, then the egg, and last the crushed croutons. Place gently into hot oil for about 2-3 minutes (It does not take long for the shrimp to cook and the breading to brown!). I do the shrimp in batches so as not to lower the temperature of the oil too much. 5-8 Shrimp is a good amount per batch. Repeat steps until all of the shrimp are fried. Season with salt.


Last, assemble Tacos with Avocado, lettuce, cabbage, tomato, onion, jalapeno, and shrimp. Squeeze a little lime juice over the top and serve with jalapeno black beans and chili lime infused brown rice.



We know that not EVERY recipe will have our delicious croutons in it, and that is okay! That being said, what is Cinco de Mayo without a Margarita?! Here’s our spin on the classic Margarita. Enjoy!


Jalapeno Margarita Ingredients: 

1/2 Cup Tequila

Juice of 1 Lime

Juice of 1/2 Lemon

Juice of 1/2 Orange

1/2 Cup Cold Water

2 TBSP Jalapeno Simple Syrup



In metal shaker add ice, tequila, the juice of one lime, the juice of 1/2 lemon, the juice of 1/2 orange, cold water, and 2 TBSP of Jalapeno Simple Syrup (recipe below). Now shake what yo’ mama gave you! (Shake the metal shaker) pour into salt rimmed glass (optional) garnish with lime and jalapeno slice.


Jalapeno Simple Syrup:

1/2 Cup of Water

1/2 Cup of Sugar

1/2 Jalapeno Pepper (seeds removed)

In sauce pan on medium heat combine water, sugar, and jalapeno pepper. Cook until mixture reduces by about half. Remove from heat and let cool.
