April 7th is National Beer Day

Vermont is known for a lot of things and beer is certainly one of them. The Green Mountain State is home to over 40 breweries making us the number one state in the US for craft breweries per capita. At Olivia’s Croutons in New Haven, VT, there is only one way to celebrate National Beer Day and that is with a heaping bowl of cheddar beer soup topped with our deliciously fresh parmesan pepper croutons. Made with local ingredients, the thick, rich, and melty soup nestles into every corner of each crouton making every bite taste like the ultimate adult grilled cheese. The warmth of the soup releases all of the fresh, wholesome oils that makes our croutons so irresistible. This is a seriously cheesy soup that highlights all of the great qualities of our croutons and celebrates the deep flavor of a local, craft, Vermont beer. Cheers!


Olivia’s Cheddar Beer Soup

16 oz of your favorite beer (we used Switchback)

32 oz of chicken stock

1 cup diced carrot

¾ cup diced onion

Simmer in slow cooker (crock pot) for 8 hrs.

Remove stock and veggies into blender

Add 5 TBSP cornstarch to warm stock, blend on med – med / high

Add 3 Cups Cheddar (we used Cabot Sharp Cheddar) blend on med – med / high until smooth

Pour soup back into slow cooker

Add 1 tsp garlic powder

Add ½ tsp cayenne pepper

Add ¼ tsp nutmeg

Salt and Pepper to taste

Simmer on low until you are ready to indulge

Serve with Olivia’s Parmesan Pepper Crouton’s
